Chocolate Cookies (Healthy! No butter or flour!)

 Have you ever found a healthy dessert recipe online?  This is how many of those stories go:  Get all excited over this healthy so called “dessert.”  Make it.  Taste it.  Make a face.  Unfortunately, many people give up once they try one healthy dessert and fail.  It’s really sad.  But really, there are many healthy desserts that are out there that taste good and like an actual, unhealthy dessert does.  These healthy, fudgy chocolate cookies are an example of one of those healthy desserts that actually tastes like a dessert.  The secret?  Avocado.

 The avocado substitutes the butter.  The dough may look a little green, but the deep brown color will shine more so when baked.  What does this mean?  You can trick your kids into thinking it’s just a regular, unhealthy dessert.  They’ll never guess there is avocado.  I tried it on my sister(who tends to be picky when it comes to avocado) and her friend.  They insisted on another cookie.  When I admitted I had snuck in one avocado, they couldn’t believe it.

I also used coconut sugar in place of granulated sugar.  However, many people with nut allergies are also allergic to coconut.  Coconut is considered a tree nut by the FDA, so if you’ve never tried it or are allergic to it, regular sugar, honey, or one banana will work just fine as a substitution.

Chocolate Cookies
flesh of one avocado
1/2 cup coconut sugar or regular sugar(see note above, especially if you have a nut allergy)
1 egg
1/2 cup unsweetened cocoa powder
1/2 tsp. Baking Soda
chocolate chips(keep it real healthy with dark chocolate)
Preheat oven to 350 degrees.
Beat together avocado and sugar.
Add egg.
Mix in cocoa and baking powder.
Stir in chocolate chips.
Bake for about 8-11 minutes.
